Like almost all traditional Italian kitchens, even the Tuscan one is characterized by simple preparations, with ingredients that are easily available and of peasant origin.

Both variations feature heavily in traditional Tuscan food and you’ll find versions of just about everything infused with tartufo, from balsamic vinegar to pecorino cheese. You can also try the pappardelle alla lepre, very wide egg noodles in a strong-sauce made from wild hare, the king of Tuscan pasta, or a variant of the sort such as pasta with a wild boar sauce.
However, Tuscan cucine recipes also provides space at the table for vegetarians with many soups made with kale, pappa al pomodoro and ribollita (made with Tuscan bread). In particular, black cabbage is often used during the winter in rustic Tuscan cuisine and original typical Tuscan dishes such as grilled peasant (with polenta, corn meal) and slices of toasted bread and flavoured with garlic.
